In this premier issue I’ll be focusing on a cuisine that has taken over the globe in a way that its ancestors could have only dreamed about — I am of course talking about Italian food. The thing is, anyone who has ever turned on a cooker has made at least one of the Italian classics. Instead, I’m going to make dishes that are inspired by the foundational flavours and ingredients. Tighten that apron and read on! For this issue’s ‘Must Visit’ I head to Carriageworks Farmers Market for a showcase of lovingly grown colour, and get myself in a tizzle over some high-grade drizzle in this issue’s Spotlight.
